Limburger Cheese
Limburger cheese is especially known for its surprisingly pungent odor. Many people who have been in the presence of this particular cheese compare the smell to moldy, rotting, unwashed feet. This smell is due to the fact that it is fermented with Brevibacterium linens, which are the same bacteria responsible for body odor. However once you get past the strong rather pungent odor it is actually a delicious soft creamy cheese with a very strong, spicy and aromatic flavor. As it ages it becomes smooth and spreadable. There is also a hint of sweetness to the cheese as well. It has a rind that ranges in color from yellow to a reddish-brown and a yellow interior.
Although Limburger cheese originated in Belgium it now is mostly produced in Germany and is very popular all over Europe. Currently in the US the only state that produces it is Monroe, Wisconsin. This particular cheese is known to go well with foods such as rye bread and onions and other strong foods. It is a wonderful addition to sandwiches and salads. For those brave enough to get past the smell they are often in for a delicious treat, but you still may want to keep a breath mint handy.
